How to prepare pure ghee??
Ghee is an important item in daily Indian diet. In all most all Indian homes, ghee is consumed on a daily basis. Ghee has a lots of health benefits like:
- antiseptic properties
- good for skin
- improves digestion
- smoothens the intestinal activity
- acts as a lubricant for joints and reduces pain
Also, some dishes like khichadi, puranpoli, kheer, almost all the Indian sweets or simple steamed rice are just impossible to savoir without ghee!
To make pure ghee at home is easy. All one needs is milk..!
Milk (preferably cow's milk )
Boil the milk and let it cool.
If required, keep it in the refrigerator so that the cream becomes thick.
Take out the cream part of the milk in a glass/clay bowl and then make it a little warm. Put a very small quantity of curd almost tip of the spoon in that warm cream milk and stir well.
Cover the bowl with a lid. It will take around 4-5 or even 8-9 hours depending on the season for the curd to set.
(During summers, it doesn't need much time. But during winters, even hot milk can take many hours to set in as curd.)
Once the curd is set, take it in a jar and churn the curd with a churning staff. If you don’t have one, you can use a blender as well.
After you have churned for a few minutes all the curd and cream gets mixed very well.
Then add some water and churn again. Repeat churning and add water, as required. Finally the butter will float on the surface of the butter milk. Take out the butter and wash it with water in a bowl to remove the extra butter milk in it. Then take a thick bottomed (only) pan or vessel and put butter in it. Turn on the gas and put it on low flame.
First the butter will melt and come to a boil and then slowly it will attain transparency. It will turn golden brown in color, transparent like oil and have a nice aroma. Put 2 drops of water in it and listen the crackling sound. If its there then its done. Else let it be on flame for few more minutes. Then repeat the water test and turn off the gas. Let the ghee cool. Pour it in a clean container before it becomes thick.
Ghee is ready to consume...!
This is the best method to have the purest form of ghee at home.
