Hotel Management - Course Details of 3 year diploma & Entrance test
Admission process and schedule of 3 year diploma course at National Council for Hotel Management and Catering Technology and its affiliate institutes. The schedule of learning during the 3 years in a hotel school are divided into three distinct phases. These phases are :
The first year is spent in learning basic skills under laboratory conditions. Students are taught how to cook, serve at a table, make beds, and are introduced to the basics of hotel and tourism. Each day is divided between theory and practical class.
In the first six months of the second year, the students in the hotel, practice their skills in live conditions. Placement is organised by the institute. Students learn quality food preparation, and get hands on training and try out the regional cuisines of India.
The final year covers managerial training in financial management, sales and marketing, budging etc. Students learn through shouldering responsibilities of the institute as mess proctor, hostel proctor, cultural activities secretary, president, general secretary and treasurer of the students union. They get an opportunity to try out their managerial skills in live conditions at the institute.
Theory papers during the course include Food production theory, Serving styles, Front Office operations, Food and beverage service, Banquet service, Accounts and Book-keeping, Hotel Maintenance, Principles of Management, Housekeeping, Computer Applications, Sales and Marketing, Economics, Hotel Law, Nutrition, Foreign Language Hotel Management institutions have well equipped laboratories. Students learn basic and advanced cooking and baking in laboratory kitchens. They conduct microbiology experiments in food science labs. They learn to handle reservations and registrations in front office labs and table service in training restaurants.
This precedes the hands on training which is conducted in a hotel. The students now come in direct contact with guests and operate actual systems and procedures in live situations. For those joining hotels they are put on the job after a brief induction period.
Selection to the 3 year courses is made through an entrance test. The test can be taken in English or Hindi. The test has components of English language, numerical aptitude, scientific aptitude, logical deduction and reasoning.
English language- This is a test of English usage, comprehension, vocabulary.
Numerical aptitude- Arithmetic and algebra and different types of numerical problems are tested.
Scientific aptitude- Knowledge of physics and chemistry of the high school level is tested.
Logical reasoning- General mental ability questions covering non-verbal or pictorial reasoning, sequences of words, numbers or alphabets, relationships, verbal reasoning form part of this section.
General awareness- This section includes questions on general knowledge and awareness.
In the interview and group discussion sessions, the candidate's general awareness and personality are evaluated. They are sometimes given hypothetical managerial problems and asked to give their approach towards tackling the problem. They would have to justify their stand. Most schools of hotel management give weightage to academics as well as the personality of the applicants.

To sharpen GK, firming up the habit of daily newspaper reading is an absolute must for every aspirant. Ideally, the preparation should start a few months in advance of the test. Practice to master sections on quantitative analysis and reasoning. Develop a good command over English comprehension and update on all current issues.
